After missing his favourite snack from his South African home, founder Simon Smith began making his own biltong out of a shoe box on his desk at work. Friends and family would often ask to try some, and word quickly spread. Simon's small shoe box airer quickly turned into an old army storage crate before his hobby became a company and graduated into a purpose built facility on Simon's new farm in West Sussex.
The biltong recipe came from Mr Willem Van de Ploeg, a suitably South African–Dutch name if ever I've heard one, who worked with Simon's father in a restaurant in South Africa. When Willem retired to the middle of the Namibian desert, presumably after a bit of a peace and quiet, he found himself being badgered by Simon for the recipe to his biltong spices and marinades so his flavourful secrets were never lost.
